Recipe: Easy Chocolate Sandwich Cookies

These Easy Chocolate Sandwich Cookies are adapted from a recipe in the neat little cookbook Christmas With Paula Deen. Made with boxed cake mix and a filling of marshmallow creme, they are chewy, gooey, and very sweet. Perfect for your sweet tooth or Valentine. :)

Easy Chocolate Sandwich Cookies

Prep: 10 minutes     Bake: 8-10 minutes      Makes: about 2 dozen

 

1 box devil's food cake mix

2 eggs, lightly beaten

1/3 cup vegetable oil

jar marshmallow creme

 

Heat oven to 350 degrees F. Beat cake mix, eggs, and oil on low until combined. Dough will be a bit stiff. Pinch off smallish pieces and roll into 1-inch balls. Place 1 inch apart on cookie sheets and flatten slightly (I used a glass bottom pressed in sugar). Bake 8-10 minutes. Cool on wire racks. Frost half the cookies with marshmallow creme (a small offset spatula works well) and press other cookie on top to make sandwiches. Store in the refrigerator. Enjoy! :)
